"A wine in full ferment produces carbon dioxide so the liquid would have been moving as if in a boil. The ancients thought it was alive or imbued with spirit thus giving birth to the spirit industry.

"This is a moniker that has never changed over time. Interestingly, mankind was making wine for centuries before we even knew what initiated the process. Fermentation was not linked to yeast until 1857."
